Color charge is a property of quarks and gluons that is related to the particles strong interactions in the theory of quantum chromodynamics QCD. Therefore while each quarks color constantly changes their strong interaction is preserved.
For example if a red quark emits a redantigreen gluon it becomes green and if a green quark absorbs a redantigreen gluon it becomes red.
